why does user name and email show in windows mail to and from fields

I just started using Windows mail with this new Vista computer.
When I send or receive a email both the user name and email address show in the to or from fields
Don Smith
Don Jones
Can this be eliminated?

The email addresses did not
The email addresses did not show in my message after the name
it should have shown Don Smith < don smith @ cox.net > Don jones < don jones @ con.net > spaces added hopefully so it will give better idea of my problems
